A new study has found that a regular serving of fried chicken or fish can increase the risk of death from any cause except cancer.

"For example, in the USA, fried foods are eaten more often away from home (eg, in fast food restaurants) than at home; away from home, fried foods are usually deep fried in corn oil, which is the most common frying medium".

Regularly eating fried food is linked with a heightened risk of death from any cause and heart-related death, among postmenopausal women, finds a United States study in The BMJ. "Unfortunately, we know very little about long-term health effect of fried food consumption".

Even though the study focused on women, Dr. Bao said it's very likely that men would be similarly affected by a diet heavy in fried foods.

Several cohort studies in United States populations have found that higher consumption of fried foods was associated with a higher risk of type 2 diabetes and cardiovascular disease, they write, but a study in a Mediterranean population found no association between fried food consumption and coronary heart disease.

The study looked into the general health and eating habits of females aged 50 to 79 years old in February 2017.

One or more servings of fried chicken a day was linked to a 13 percent higher risk of death from any cause and a 12 percent higher risk of heart-related death.

The study controlled for other mortality factors, including education, income, and dietary content-among other things-, so its findings are statistically significant.

During this time, 31,588 deaths occurred, including 9,320 heart-related deaths 8,358 cancer deaths and 13,880 from other causes.

The researchers found no evidence linking fried food to an increased risk of cancer death, and the study did not prove a cause-and-effect link between fried foods and early death. This in and of itself may not mean all that much, the study's authors said, but when they looked at specific kinds of fried food, more relevant trends could be observed.

The same CNN report also noted that Wei Bao, one of the proponents of the study, said that its results are not globally conclusive, as different cultures have varying ways of frying their food.

Bao believes portion control and reducing how often we indulge in fried food can be steps toward protecting our health.

Additional research taking various cooking methods, temperature and type of oil into consideration could shed light on the nature of the associations, the researchers write. Glycation products - compounds formed when protein-rich animal foods, like meat and fish, are cooked at high temperatures -are also linked with a higher risk of all cause and cardiovascular mortality, according to previous studies.

There might be "unidentified confounders" about heart-related deaths as well, so firm conclusions can not be drawn about the cause.
